Halibut Alyeska

This is a very good way to use up some of that summer catch ~ enjoy!
Serves 4
1 pound Halibut, chunks of whole fillets (pat dry with paper towels)
1/4 cup sour cream
1/4 cup mayonnaise
1 tablespoon lemon juice
1/2 teaspoon mustard
1/4 cup onion, chopped (I used green onions)
1/2 teaspoon salt (I used Sea Salt)
1/2 teaspoon pepper
1/2 cup Cheddar cheese, grated
Place halibut in 6 x 10 baking dish. Spray with Pam or Olive Oil Spray. Combine all other ingredients
except the cheese. Pour over the fish. Bake 25 minutes in 350°F oven. Sprinkle cheese over the top and bake another 5 minutes.

Salmon Souffle`

1 No. 1 can Pink Salmon
1 tsp Salt
½ tsp Pepper
2Tbls. Lemon Juice
½ cup Cracker Crumbs
½ Cup Hot Milk
2 Eggs separated, set aside the egg whites for later
Drain and flake salmon. Combine salmon, seasonings, lemon juice, cracker crumbs, and milk. Add egg yolks and mix well.
Beat egg whites until stiff. Fold into salmon mixture. Turn into greased loaf pan.
Bake at 350°F for 1 hour. Serve with your favorite tarter sauce or alone. Enjoy!!

1/2 C lowfat mayonnaise
1 T fresh dill
1/8 C cooking wine
1 t minced garlic
1 t salt and pepper
1 C low fat grated cheddar cheese
1 C bread crumbs
Place halibut in 13 X 9 baking dish. Mix together sour cream, mayo, dill, wine, garlic, salt and pepper and spread on fish. Bake 20-25 minutes at about 350°F. Sprinkle cheese and bread crumbs on top and bake until crispy.
