Busy Day Peach Cobbler

Easy to make, delicious to eat.
Ingredients:
1 1/2 qt peaches
1 tbs tapioca
1 cup sugar
1/2 tsp almond extract
Set these mixed items aside while you prepare the crust as follows:
1 cup flour
1 cup sugar
2 tsp baking powder
1 egg
1 cup milk
1 tsp vanilla flavoring
Directions:
Mix first four ingredients and set aside while mixing crust.
Mix next six ingredients in separate bowl, stirring well.
Pour crust mixture in bottom of 9x13 inch pan. Pour peach mixture over.
Then pour 1 cube melted butter over all. Bake 350°F degrees for 40 minutes.

Black Cherry Trifle (Sugar Free version)

Ingredients
1 - 8 oz pg no-sugar-added low-fat choc cake mix
1 - 4 serving size package sugar free chocolate pudding mix instant or you
can use the cooked style which is what I prefer.
2 cups fat-free milk
1 lb fresh dark sweet cherries, pitted or one 16oz pkg of frozen pitted dark
cherries thawed and well drained
2 cups of fat free whipped dessert topping, thawed
Unsweetened cocoa powder (optional for a topping sprinkle)
Directions
Prepare cake mix according to package directions in a 13x9x2 baking pan. Cool in pan on wire rack for 10 min, remove cake from pan. Cut into 1” pieces
Meanwhile prepare pudding mix according to the package directions using the 2 cups of fat free milk. Cover and chill about 30 minutes if using instant pudding. When using cooked pudding, if you need your desert right away, cool the cooked pudding in the freezer.
In a 3 qt trifle bowl or glass bowl, layer half the cake cubes, half the cherries, half the pudding, and half the topping. Repeat the layers. If desired, sprinkle with cocoa powder. Makes 16 2/3 cups.
Make Ahead Directions: Prepare trifle as directed. Cover and chill up to 4 hours. If you do not want the sugar free version just use regular products.
