No Cook Strawberry Kiwi Jam
Place 2 1/2 cups of crushed strawberries in a bowl. Add 1 peeled / chopped kiwi.
In a separate bowl, mix a package of Certo light crystals with 1/4 cup sugar. Gradually add to fruit and mix well. Leave it set for 1/2 hour.
Add 3 more cups of sugar and stir until most of the sugar is dissolved. Pour into jars, cover tightly and let sit for up to 24 hours until set.
Can be stored in freezer or in refrigerator for up to one month.

Easy Refrigerator Pickles

6 cups sliced cucumbers mixed with bell peppers, zuchinni & 4 sliced garlic cloves
2 cups thinly sliced onions
1 1/2 cups white vinegar
1 1/2 cups sugar
3/4 tsp salt
1/2 tsp mustard seeds
1/2 tsp celery seeds
1/2 tsp ground turmeric
Place 3 cups of vegetables in large glass mixing bowl. Layer 1 cup of the sliced onions and repeat layer ingredients.
Combine vinegar and remaining ingredients in a medium size saucepan; bring to a boil and
continue to cook for one minute.
Pour over vegetable mixture. Let cool. Cover and refrigerate for 4 days. Stores in refrigerator for one month, if they last that long. : )
